This is delicious, light and very refreshing! I used a red bell pepper as I did not have a green one, and a couple of shakes of chives to add that "green" color that I missed by not having a green pepper. I loved it! I can see me making this often for BBQ's this summer. Thank you for sharing this little gem of a recipe.

This is a nice way to jazz up the humble cottage cheese. Went great on my turkey sandwiches for lunch, thanks! I didn't have peppers but subbed cherry tomatoes from my garden, they went great with this.
