*reviewed for Spring 2007 Pick A Chef* I have made this salad for years with slight variations. After adopting you for PAC I selected this recipe to try and made it to serve with cuban pressed sandwiches. I fortunately had fresh hot house tomatoes and a seedless english cucumber on hand. The green onions were the touch new to me and I really liked the addition. I also added lots of fresh cracked black pepper. Thoroughly draining the cottage cheese is key or the salad ends up weepy. I will be making your version again. Thank you for sharing your recipe!
