So many other recipes I've found call for several ingredients or make a lot. I've always made my pancakes much more simply than that. I got this recipe when I was recovering from surgery - they're high-protein and quick and easy. Perfect for a quick breakfast when you don't feel well.
- 1 egg (or 2 egg whites)
- 118.29 ml cottage cheese
- 59.14 ml Bisquick (also works great with dry pancake mix)
- Combine all ingredients in a bowl.
- Cook like regular pancakes in a greased skillet, flipping once - mind the cheese, it melts and sticks sometimes.
- Serve with syrup or butter (or both).
This was fantastic! I struggle with getting enough protein in, and this was a great way to pack in the protein, yet keep it light and yummy. I replaced the Bisquick with Fiber One pancake mix, which did increase the carbs slightly. However, I struggle to get enough of those in as well. 1/2 cup of Fiber One mix contains 36 grams of carbs, as I doubled the recipe to be sure to get 2 grain and 6 protein exchanges (4 with 1 cup cottage cheese, plus the two eggs). I also included 1 packet of Truvia in the mix and put the cottage cheese through a food processor first. I used sugar free syrup and am so happy I tried this. Definitely will be making this again and again.
Loved this recipe! So easy to make and so tasty. I was looking for something that was high in protein and not heavy. This was just right. Thanks for posting!
Easy and delish. What a great, easy lunch for the kids when everybody is sick of plain eggs, grilled cheese, etc. Thanks! p.s. Added blueberries and a touch of sugar - 2 tsp, I think.
