These are my son's favorite pancakes. They are fast and easy and really, really delicious.

  1. Whisk the dry ingredients together.
  2. Whisk the cottage cheese together with the remaining wet ingredients.
  3. Combine the wet into the dry and mix just until incorporated.
  4. The batter will be very thick and lumpy.
  5. Heat your griddle and lightly grease it if necessary.
  6. Use 1/4 c.
  7. batter per pancake, allowing plenty of space for spreading.
  8. Cook the pancakes until light brown on one side, flip and cook the other.
  9. Serve immediately with maple syrup or applesauce.

These were great! I don't like cottage cheese and was really afraid to try them let alone make them. But they taste great and my DH love them as well. One change I made I use just the white of the eggs and not the yolk. Still great. Plan on making them again and again. Thanks P4

I think these are great. I haven't tried the other ones, as they use ingredients that I don't always have on hand. I alter this slightly by adding 2T of lemon juice. Yum. I think that these pancakes are very flexible in flavors, has a great texture and the batter has a great consistancy. We have had these about 5 times now. (Including a toddler and adults.)

Sorry PetitFour...I usually like your recipes, but these were not the pancakes for me. I wound up adding extra milk to get them to spread more in the pan. They were easier to cook when the batter was thinned.
