So light and tasty. Delicious with stewed or canned fruit, as well as syrup!

Directions

  1. In medium bowl, mash cottage cheese till almost smooth.
  2. Add eggs, beat lightly.
  3. Add flour, salt and cinnamon; mix well.
  4. Drop by scant 1/4 cup onto lightly greased hot griddle or skillet.
  5. When bubbles appear on top, turn and brown lightly on other side.

Great low carb alternative to regular pancakes! Great idea!! They came out more moist than regular pancakes and tasted a little bit more like egg, a bit like french toast. I added a little vanilla. Will definitely make again!

Mmmmmmmmmm! These pancakes are delicious! The idea of cottage cheese with panckes didn't sound all that great at first. But, they really are delicious... you should really try these!

This was super easy to make. I used 2 whole eggs instead of 4 egg whites. I doubled the recipe, blended in the blender. It was a little bland alone but when I poured maple syrup over it, the kids gobbled it up!
