I've made this three times now and it has been a hit with everyone from my mother (who doesn't care for fish) to my boyfriend (a fabulous New Orleans chef). It is easy to make and so delicious! I haven't changed anything although I eyeball ingredients and probably use a bit more cayenne than called for. I use black beans and I think that using cilantro (over parsley) is a must!
