This is not the fried polenta version--you eat this in a bowl like oatmeal. Add a little milk and sugar to your taste--Mmm!

  1. Combine 2 1/2 cup water and salt in small saucepan; bring to a boil.
  2. Mix cornmeal with remaining water in a small bowl.
  3. Add cornmeal mixture slowly to boiling water, stirring constantly.
  4. Reduce heat to low; cook stirring constantly, for 5 minutes or until mixture is thickened.

This was really good! I loved fried mush so I had to try this and I did enjoy it. I topped mine with some sugar and lowfat milk for a great healthy breakfast - thanks for sharing your recipe!

Sunday nights, my mom would cook this for supper. I always loved it. My favorite way of eating it was adding a scoop of vanilla ice cream on top of it. Thanks for posting it.

As a true fan of both polenta and my morning bowl of oats, not sure why I forget that cornmeal makes for delicious and wholesome breakfast fare. I topped mine with blueberries, blackberries and raspberries and enjoyed every bite. Made for 1-2-3 hit Wonders.
