  • Preheat oven to 375º F.
  • Grease muffin pan.
  • Mix dry ingredients together.
  • In a seperate bowl combine melted butter, egg and milk; mix well.
  • Add dry mix to wet mix and stir until just combined.
  • Spoon batter into muffin pan and bake for 15-20 minutes.
  • Serve hot.

I have made these muffins with Cup4Cup gluten-free flour blend, I have made them with egg substitute, I have made them with Earth Balance instead of butter, I have subbed in oatmilk, and I have done a numberof combinations of those switches. Every time it's a success! These are the most forgiving, all-purpose cornbread muffins! And always quickly gobbled up by everyone at the table. Great recipe!
     
  3. I tweak the recipe by using 1/4 of brown sugar adding cinnamon powder, nutmeg vanilla, almond extract pinch of salt and evaporated milk with a table spoon of water
     
  4. Very quick and easy recipe to make. These muffins turned out beautifully, and are very tasty as well.
     
  5. I used whole wheat flour and almond milk as that is what I had available - turned out very good... wee bit dry so next time i will bake only 15 mins and a bit more milk (or slight less flour). Definiately a great recipe. I used to always make cornmeal muffins and lost the recipe ; my previous recipe had a little raspberry jam baked in the middle of the muffin - will try that next time with this receipe. I'm a full-time student at a University of Wisconsin campus, with a double major in Sociology and History. I have three adorable children, ages 9 yrs, 5 yrs, and our 2 yr old son. My nine yr old is in third grade. My 5 yr old is is in kindergarten. My littlest one is pleasantly plump. ;) We also have 2 cats. My daughter recently joined recipezaar under the name Miss Bean I also really like sewing. I make @ 1/3 of my daughters clothes. Reading is also a BIG staple in my life. One of my favorite ways to find a book is to walk into the library, pick a shelf and simply grab a book at random. I've read so many great books I probably wouldn't have found out any other way. I also like to camp and fish with my DH. He eats, sleeps and breathes fishing. He would like to one day start his own company, he hand ties and sells fishing lures locally.
