Cornmeal-Cherry Muffins

"A Kathleen Stewart recipe, as given to Fine Cooking magazine. The nice thing about this muffin is that you can make the batter up to a week ahead and just bake as needed. Nothing better than fresh, hot muffins at a moment's notice! Medium-grain cornmeal gives these muffins a rustic texture. For a finer texture, use half fine cornmeal and half medium."

  • Heat the oven to 350°F In a large mixing bowl, whisk the eggs, lemon zest, juice, butter, oil, and buttermilk.
  • In a separate bowl, whisk the flour, cornmeal, baking powder, soda, sugar, and salt.
  • Slowly pour the dry ingredients into the wet and stir until just mixed. Gently fold in the cherries.
  • Grease and flour a muffin tin (or line it with muffin papers, preferably foil). Scoop about 1/2 cup batter into each tin so that the curve of the batter is even with the rim of the cup. (Refrigerate any extra batter in an airtight container for up to a week.).
  • Bake in the middle of the oven until firm to the touch, 30 to 35 minute Remove the muffins from the tin when they're cool enough to handle.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
