Boy am I mad at myself for forgetting to take a photo of this dish. The little hens were so wonderfully brown and lovely looking - just like precious tiny turkeys at Thanksgiving. I did have my doubts about the amount of butter involved, and you could probably get by with half of it, but it sure made basting the birds easy to have that much juice in the pan. I didn't have any rub seasoning, so I just used some BBQ seasoning in a lesser amount - applied until the skin was well seasoned. The flavoring was excellent. I think I'll put some herbs on the outside next time as well as on the inside. The time in the oven was right on too. Thanks for an excellent recipe that I may try with chicken as well.
Morti made these while I was there visiting her last week. I am not a Cornish game hen fan, but these were very moist and delicious. I thoroughly enjoyed my meal. Thanks for a wonderful dinner and a fantastic time sis.
