I like recipes you can make ahead and freeze too. I love reuben sandwiches, and these minis' are absolutely wonderful. I used deli coerned beef and whole-grain mustard which gave them a hearty, zesty flavor. These sandwiches were so easy to mak. We baked some and froze the rest. My appetizer table is going to knock their socks off! Thanks for sharing another one of your scathingly brilliant ideas!

I have made this appetizer for years and it's always a big hit. Easy to put together and the combination of flavors is outstanding. Although I've never tried freezing them, I'm sure they would be just as good and just more time saved when it's party time.

Agreed, can't get easier. I too used a deli corned beef and whole grain mustard. It was a hit and I'll always have a back up supply in the freeze.

I made a double recipe of these, and gave one batch to my DS to keep in his freezer. I took some out of my freezer, and made some for my DH and his friend last night as a evening snack, and both of them could not stop eating these, they loved them! I really have to say that they are wonderful, and I really love the idea of preparing ahead of time and freezing. This recipe will be a repeater for sure, thank you Lorac for a great recipe!...Kittencal:)
