From my former manager..very different and so good. I don't like traditional potato salads but I love this one.


  1. Cook potatoes in jackets and cool. Peel and dice. Toss with remaining ingredients except chives.
  2. Chill and serve with chives or green onions chopped over top.

Fabulous potato salad! I love the different textures of the ingredients and the tangy dressing. I used my leftover cooked corned beef. I sprinkled the chopped green onions on top as written, but I also stirred some right into the salad. This will get made often at my house! Thanx!
