I used this method (slightly amended for the topping ingredients) with superb results. I found it after reading Simply Recipes method for baking corned beef. I did not want to bake corned beef per se, but wanted to use the Clay Cooker. I researched and found this recipe/method. Thank you for posting it. I would highly recommend to any to try this method. The corned beef was spectacular. Succulent with a lovely crust from the final uncovered baking. I will never go back to the boiled method. Also sauteed the cabbage separately with some of the corned beef liquor.
Simply outstanding! Made with a slightly smaller clay cooker but turned out great!
