  • Cook corned beef according to instructions on package. This will take 3-4 hours.
  • Remove beef from cooking liquid, reserving liquid.
  • When beef is cool, cut into 1/2 inch dice.
  • When cooking liquid has cooled to lukewarm, add potatoes & soak for about 15 minutes to soften.
  • Heat oil in a large nonstick skillet. Remove potatoes from liquid with a slotted spoon & add to skillet. Cook over medium heat until softened (about 10 minutes).
  • Note: stir frequently throughout entire cooking process to prevent sticking.
  • Add onion and bell pepper and cook until softened (about 5 minutes).
  • Add beef and cook until browned (about 5 minutes).
  • Add garlic and salt & pepper to taste. Cook for another minute or so until garlic is fragrant.
  • Add tomato sauce and hot sauce. Simmer over medium low heat until sauce thickens (about 10 minutes).
  • Spoon hash onto plates and serve with fried eggs on top.
