Made for hubby & I this morning. Extremely easy (but I think next time I will double the potatoes, didn't seem to be enough). The smaller the cubes, the crispier they were, which was great!. Seasoning was great, also. Then adding an 'over-easy' egg to the top of each of the plates made it super yummy! Ooey - gooey good-ness! Definitely a keeper recipe. Thank you for posting. (Made for "My 3 Chefs" fall 2013)

  1. Melt butter in large frying pan over Medium heat.
  2. Add potatoes and onions.
  3. Brown, stirring occasionally.
  4. Add black pepper.
  5. While potatoes are browning, chop corned beef into 1/4" dice (or smaller).
  6. When potatoes are slightly brown, add corned beef, and salt.
  7. Raise the heat to high and saute until corned beef is slightly crisp around the edges, stirring often.
  8. remove from heat and serve (Top with fried egg).
