Corned beef and potatoes are combined for a quick and easy meal
- Slice corned beef 1/4 inch thick or crumble.
- Thinly slice potatoes.
- Alternate layers in greased baking dish.
- Mix together cream of mushroom soup and milk.
- Pour over layers and bake in 350°F oven for 1 hour or until potatoes are tender.
We liked it, but it was a bit too watery for us. Maybe we should've added half the milk and used more beef and potatoes. We used corned beef brisket and red potatoes. It was really salty, so I think I'll try low-sodium cream of mushroom next time. But all in all, it was a tasty meal. And easy to make!
