Cornbread Salad

"My mom gave me this recipe. I previewed all other like ones on this site. Mine has fewest ingredients, so I look forward to tweaking mine w/ others to enhance it."

  • Cornbread:

  • Combine dry ingredients.
  • Combine others. Mix both together.
  • Bake in greased 8" square baking pan in preheated 425 deg. oven 20-25 minute.
  • Salad:

  • Crumble cornbread in bowl.
  • Add onion, pepper, & tomato.
  • Mix mayo, mustard, pepper, salt.
  • Cooked, crumbled bacon, optional.
  • Pour over, stir & chill.
  • (My cornbread recipe is off of Aunt Jemima's yellow cornmeal).
