Sweet, moist corn bread, almost like a pudding, but browned and crispy on top.
- 1 cup plain flour
- 1 cup self-rising cornmeal (either way)
- 1⁄2 cup sugar
- 1 egg, beaten
- 1 cup milk
- 1 1⁄2 cups water
- Mix dry ingredients together then add liquids. Melt 1/4 cup Crisco in 9 by 13 inch pan, (glass or metal) and pour mixture over top of very hot, melted crisco. Don't over stir mixture.
- Bake in 425 degree oven for approximately 30-40 minutes. (depending on oven).
- Great just from the oven or cold.
