Delicious! Added sweet corn that I charred in some butter on the stove top before hand to the mix (only the ear of 1 corn) definitely perfect to pair with a Mexican style breakfast omelette! Yummmmmmmmm!
This was super easy and quick to whip up, and best of all it was delicious. The cakes came out fluffy and huge. We piled them high and ate with maple syrup and butter for breakfast on a snowy morning. Thank you for posting this recipe!

Excellent and easy. Delicious. I added a little more milk to thin the batter out a bit... and added a little extra sugar to the dry mix. After using 1/4 cup measure to put them into a pan, I added fresh chopped Jersey peaches to each pancake... then flipped and finished. Served with sugar free syrup and whipped butter. This is a keeper. Next time, I'll serve some poached eggs with it. I can see that it would also be good as a savory pancake with cheddar cheese and jalapenos. Endless possibilities I'm sure. Thanks for the idea.
I agree that these pancakes were incredibly quick and easy. However, they were denser and more savory than I expected. My expectations were just not right. When others try this, they should keep in mind that it will be more savory than sweet and more hearty and dense rather than light and fluffy.

Let me just say--I do NOT like pancakes.................but...........I love these! Especially with a few blueberries sprinkled onto each pancake just before turning them! These are really great--and so easy! Thank you, thank you, thank you!

these were officially delicious. my first attempt at pancakes and i had it down by the third. made with scrambled eggs, peaches, and coffee, my roommate loves me now. happy fourth o july everyone.
No more Aunt Jemima for me. These were awesome. I had never tried cornmeal pancakes before, but I will be eating them from now on. I used an 8.5 oz. box of Jiffy corn muffin mix and added a little extra milk though, but they were great. I had them with a little butter and corn syrup. They really looked as good as the picture too. Thanks Nanita for a great recipe.
