I got this recipe from a coworker and it is something that we always request at our birthday lunches. It is moist and delicious, and easy to make.
- 1 (8 ounce) box Jiffy cornbread mix
- 1⁄2 cup vegetable oil
- 3 eggs, beaten
- 1⁄4 cup sugar
- 1 (8 ounce) can creamed corn
- 8 ounces vanilla yogurt
- Whisk oil and eggs together. Add other ingredients and mix well. Pour mixture into a well-greased 8"-9" square pan or pie pan. Bake at 375 for 40 minutes.
This is exactly what I was looking for. I've tried several recipes with cornmeal insted of the Jiffy mix, but I just can't match the flavor. Thanks for sharing.
