A bit bland... I guess that's just the way cornbread is supposed to be. I even added some crushed pepper flakes and chili powder, but it didn't help much!! I used soymilk and three tablespoons of Splenda. The texture was good, if a bit heavy. Thanks for posting!

  1. Preheat oven to 425 degrees.
  2. Lightly spray an 8" by 8" cake pan (or equivalent iron skillet or other oven-proof pan) with vegetable oil and put into the oven to preheat.
  3. Mix all ingredients together in a large bowl, pour batter into heated pan and bake for 20 minutes.
