Corn with Sour Cream and Bacon

- 1⁄2 lb bacon
- 4 tablespoons bacon drippings
- 1⁄2 small onion, chopped
- 2 tablespoons flour
- 8 ounces sour cream
- 2 (15 1/4 ounce) cans whole kernel corn, well drained
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1 dash cayenne pepper
directions
- Fry bacon until crisp then crumble and set aside.
- Drain off all but 4 tbsp bacon drippings.
- Over medium heat saute onions in drippings until soft.
- Add flour to drippings and saute for 3-4 minutes.
- Add corn and cook 3 minutes.
- Add sour cream stirring until well blended.
- Add reserved crumbled bacon and seasonings and cook 10 minutes but do not let sour cream boil.

Living in the south we are very lucky to have an abundance of fresh seafood and other ingredients at our disposal when trying new recipes. My husband and I both love to cook and have learned a lot about cooking from our native Louisianian, Paul Prudhomme (we learned to be very careful with his recipes as they are very spicy - even for us), native New Orleanian, Frank Davis and transplanted Emeril Lagasse. It would be very difficult to pick an all time favorite cookbook since I have approximately 200. I enjoy collecting local cookbooks as well as others from different areas. This picture is obviously when DH and I got married. I cooked all the food and even made my wedding cake.
