I was given this recipe from my sister-in-law and my family loves it. It adds a different flavor to corn which is one of our family favorites. It's quick and easy!
- In a medium saucepan, melt the oleo and the cream cheese together.
- Mix well.
- Add the 2 cans of corn and the can of chilies and mix well.
- DO NOT BOIL!
- Cook until hot and then serve.
- Very quick and very good!
I love this! I use frozen corn. Sometimes I keep the recipe the same, sometimes I cut the oleo to 1T and add about 1/2 C salsa or taco sauce. Either way I make it, I don't bother melting the oleo or cream cheese. I just let it soften for a bit, then mix it together. I heat it in the microwave or toss it into the oven. It just depends on my mood. Delicious, very versatile, and a nice addition to either a holiday meal or an ordinary weekday dinner.
