Now these are not authentic by any stretch of the imagination but they are good. I like to make these for Enchiladas. These are easy to make with items you most likely have on hand.

  1. Combine Flour, corn meal and salt.
  2. Cut in the shortening
  3. add boiling water and mix well.
  4. Shape into 12 equal balls,.
  5. press between two sheets of waxed paper into 6" circles.
  6. Fry on hot, lightly greased griddle. (I just use Pam).

The flavor is outstanding, but the texture seems like a cross between a tortilla and a corn cake.

Not traditional and not perfect, but easy and quick. They have a good taste and I was able to quickly roll out a tortilla between wax paper while another was cooking. I did use a small amount regular oil instead of cooking spray since I've had problems with spray burning at medium high heat in the past.

When I made this, the dough was too sticky to press between wax paper. I ended up having to add some extra cornmeal to firm it up. It never did get flat like a tortilla is supposed to, but it made a nice corn cake instead. It still tasted fine piled with taco fixings, though.
