I cut this recipe out of a magazine, but now I have no idea which magazine it was! Time to prepare includes refrigeration time.
- 1 1⁄2 cups cucumbers, chopped
- 1 (8 3/4 ounce) can corn, drained
- 1 (16 ounce) can tomatoes, undrained
- 1⁄2 cup green pepper, chopped
- 1 stalk celery, chopped
- 3 tablespoons cider vinegar
- 2 tablespoons fresh cilantro, chopped
- Stir all ingredients together.
- Let stand in refrigerator for several hours to allow flavors to blend.
