- 3⁄4 cup soymilk
- 1⁄2 lemon
- 1 egg
- 1⁄2 cup corn, pureed
- 1⁄2 cup corn kernel
- 1 tablespoon honey
- 2 tablespoons safflower oil
- salt
- 1⁄2 teaspoon baking soda
- 1 1⁄4 cups quinoa flour
directions
- Combine lemon juice and soy milk.
- Add other ingredients.
- Heat a skillet to medium. Add oil.
- Drop spoonfuls of batter onto skillet and cook on each side until brown.
