- 2 1⁄2 cups water
- 1 (15 ounce) can vegetable broth
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 garlic clove, minced
- 1 (15 ounce) black beans
- 2 cups frozen corn
- 2 large tomatoes, diced
- 1 1⁄2 teaspoons ground oregano
- 1 1⁄2 teaspoons ground cumin
- 1⁄2 teaspoon ground cayenne pepper
directions
- Pour water into a large saucepan and bring to a boil.
- While waiting for the water to boil, saute the onion, pepper, and garlic over medium heat for 5-7 minutes.
- Add sauteed onion and pepper to the water along with the beans, corn, tomato, and spices.
- Wait for re-boil, then reduce heat and let simmer for 15 minutes.
- Remove from heat and serve while warm.
