This spicy vegetarian soup is a healthy way to warm up a cold winter day. For a nicer presentation, top individual servings with a few small pieces of baby spinach and a pinch of shredded cheese.

  1. Pour water into a large saucepan and bring to a boil.
  2. While waiting for the water to boil, saute the onion, pepper, and garlic over medium heat for 5-7 minutes.
  3. Add sauteed onion and pepper to the water along with the beans, corn, tomato, and spices.
  4. Wait for re-boil, then reduce heat and let simmer for 15 minutes.
  5. Remove from heat and serve while warm.
