Delicious little recipe i got out of a magazine and did not want to lose. Very simple and not time consuming at all. i think i could have had a meal of just these.

  1. In a small skillet, saute onion and green pepper in oil until tender; set aside. In a large bowl, whisk the flour, cornmeal, sugar, salt, oregano, baking powder, cumin, egg and milk just until combined. Fold in the corn, pimientos and onion mixture. Heat a large skillet coated with cooking spray; drop batter by the 1/4 cupfuls into skillet. spread out slightly and cook for 3 minutes on each side. Serve with salsa.

I made these last night, for dinner! Yes, I could have made a meal on them alone!! I would suggest doubling (or even tripling) the recipe, though, as one patty isn't enough, at all, even with a full meal to accompany it...oh, I think they would be great with grilled chicken!!
