Very easy to make and tasty too. I subbed fresh cilantro for the basil and added a squeeze of lime juice just before serving. Very fresh and summery tasting!

This was a great recipe for those who love a touch of Mexico. The second time I tried this I made it semi-homemade. I used a leading canned mexican corn which already has the peppers added. I melted the butter, saute the garlic and then added salt and cumin and corn. I didn't have basil so I used cilantro which worked as well. All in all a good recipe, one I will keep.
