Hmmmmmmmmmmm ............ soooooooooo good.
- 5 cups corn flakes
- 1 cup peanuts, salted
- 1 cup white Karo
- 1 teaspoon vanilla
- 1 cup sugar
- 3⁄4 cup peanut butter, chunky style
- In a large bowl; mix together corn flakes, peanuts and set aside.
- In a saucepan; combine sugar and Karo syrup.
- Bring to a boil and cover for one minute.
- Set aside for one minute.
- Stir in peanut butter and vanilla.
- Pour over corn flake mixture and stir very well.
- Drop by spoonfuls onto wax paper.
- Let cool.
At a small group Bible study, there were these funny looking cookies on a plate that were lumpy and looked like the color of pale peanut butter. I took one, thinking I would just try it. Whoa. Little did I know I was about to stumble upon my fav. all time cookie! They were chewy with a firm outer layer that was the texture of good fudge. Well, I came straight home to find the recipe and chose this one because it hadn't been reviewed. I used frosted flakes and didn't change anything else. I followed all the directions and dropped the sticky (very sticky) mixture by spoonfuls onto the wax paper. I couldn't help but sneak a bite before they were cooled and the taste was pretty similar to what I had at the group. These cooled about 3 hours and then I pryed/scraped these off the paper (next time I'll spray the paper with nonstick) and put them in a container. I noticed they were much stickier in texture than I expected them to be. When I went back to the container to get one to eat, the cookies had become one big clump! Still, that didn't stop everyone from dipping in and pulling off clumps to eat. Makes my hands sticky, though. The taste is very very very good.
