Corn Dip
"I got this recipe from a friend. It's a little different then the other corn dip recipes I've seen. Even my picky daughter (who's pregnant) can't leave this alone."

- 2 (11 ounce) cans mexicorn, Drained
- 1 (10 ounce) can Rotel tomatoes & chilies (Diced)
- 8 ounces sour cream
- 8 ounces mayonnaise
- 1 cup Mexican blend cheese (Cheddar & Jack)
- 2 -3 green onions, chopped (More or less if you want)
- 1 pinch sugar
directions
- Mix sour cream and mayo together. Add the rest of the ingredients. It's best to make it several hours before serving to allow the flavors to blend.
- Serve with scoop corn chips.

I'm a single mother of 3, 1 girl and 2 boys, and my youngest graduated from high school in 2006. I also became a grandmother in July of 2006 which has been one of the greatest experiences of my life. I'm a music teacher and have taught for eighteen years in the same school district. I've raised my kids alone, which has been very difficult at times, yet it has been extremely rewarding. I like to cook and look at recipes on zaar...but since I have an empty nest most of the time,(my 2 youngest are in college) now I can get by real cheap on the grocery bill.....
