this was a great accompaniament to our dinner tonight. i used a 12 oz bag of frozen white shoepeg corn, half of a red pepper, chopped, and i added 3/4 tsp cayenne pepper and a dash of nutmeg . a few handfuls of extra cheese to the top, delicious! i served this with hot sauce.--

I love corn, and this was such a nice addition to my corn recipes. I did substitute yogurt for the sour cream, cause that's what I had on hand. I also used Splenda instead of sugar. Yummy.

OMGosh this was fast & reaallly yum! Used fresh corn ( I love my corn stripper - did you know these are hard to find now? I mean at normal places, not Williams & Sonoma, LOL) & whipped it out in 45 minutes to go along with leftover roast beef & onion gravy, green salad! Will be keeping this one to make again, thank you Derf

I gave this the highest rating because everyone in the family liked it, it was quick and I had everything on hand to make it. I made it with a salad and bread for a meatless dinner. I used ortega chiles because I can't do bell pepper, and jack cheese because that is what I had on hand. It was great the second day for lunch. Next time I am going to use pepper jack cheese because I love spicy foods.
