Made this for Thanksgiving. Everyone loved it. I doubled the recipe with no problems using 9X13X2. I followed recipe exactly except I had some extra red pepper that I threw in too. Thanks for posting this.

11/06: We forgot all about it in the oven, didn't put it in the right size pan, the top was burnt and it was still delicious. --Update 12/09 Still making this one for holiday get togethers. I'm always asked to bring that "Corn Casserole". Yummy!

This recipe is wonderful! I modified the original a bit. I used red pepper in lieu of green, omitted the onion and I used another vegetarian-friendly brand of cornbread mix (Jiffy has lard in it). Also, I subbed low-fat sour cream and cheese. Simply outstanding dish! Thank you!

This was so good and easy to make.<br/>Made this for my family for the first time, and they all loved it!<br/>I will be making this recipe again for sure. The only thing I did change was that I drained the whole kernel corn as other ones stated, and it came out great!<br/>Thanks Felix for this great recipe!<br/>KEP

I loved this recipe, but everyone at the table said it would be a little better if pepper jack cheese were used next time.Not a criticism, but an enhancement since we were having mexican food.

This is my new favorite recipe! I frequently take this to potlucks and to family Thanksgiving. There are NEVER leftovers. Sometimes I omit the peppers, and add smoked paprika instead!

Made for the "Taste of Yellow-Live Strong" Photo tag event 2009. This is similar to a recipe I have made for years, substituting 4 oz can of chopped green peppers for the onion/green peppers. Made this one and found it to be equally as yummy!

Great addition to my Thanksgiving dinner. I followed the recipe exactly except I did not put in the green pepper. It was easy and a great way to add a "vegetable" dish. Thank you for the recipe.

Felix, I apologize for not having rated this until now. I've made it so many times I lost count. Special occasions -- NO occasion! -- it's great! I always hope there are leftovers (rarely) because I love the leftovers for breakfast!!!
