  1. Excellent recipe. I used 1 bag frozen corn, 1 can black beans, chicken boulillon cube, white wine, 1 onion, 4 garlic, 2 tbls olive oil, cumin and oregano and hot chilli oil. Added some sauted' chicken when served. Made a full flavored, low cholesterol dinner. Oriole
     
  2. I love this recipe. I reduced the oil to 1 Tablespoon, with no reduction in taste or texture. With that change, this has only 3 points for a full cup serving! And so yummy. So very, very yummy. Thank you so much for sharing this.
     
  3. I also used honey and cut the oil to just a couple teaspoons and let it sit in the fridge a couple hours and topped with a squeeze of lime. Excellent as a salad, salsa or, like I had, dinner for one.
     
  4. Really tasty, and good for you, too! I added a sweet/sour twist by throwing in a couple tbsp of cider vinegar and a tbsp of honey - pretty tasty as well! Thanks for posting!

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
