This recipe is wonderful for a summertime barbeque.
- 2 cups frozen corn, thawed
- 1⁄4 cup maple syrup
- 4 slices bacon, finely diced
- 1 medium sweet onion, finely diced
- fresh ground black pepper
- In a sauté pan, sauté corn and maple syrup until caramelized; set aside in a bowl.
- In same skillet, add bacon and cook until almost crisp, drain fat, add onion and cook until translucent.
- Add corn mixture back to pan and cook through for 3 more minutes.
