Corn and Tomato Salsa With Cilantro

This is a nice, mild, sweet salsa, best served with spicy dishes. If you're feeling creative, add black beans, bell peppers, or whatever your heart desires. It makes a great base for experimentation. If you can't get fresh tomatoes, it's fine to used canned diced ones. The corn kernels can be fresh, canned or frozen (thawed.)

  1. Combine tomatoes, corn and cilantro.
  2. Add salt and pepper to taste.
  3. Refrigerate at least 1 hour, or overnight.

Bravo! This was excellent. I added a jalapeno and some cumin and some lime juice! Very, very good. Very easy, very tasty. Thanks!

Really great and fresh tasting! I did make one quite large change however because as making I realised what a sad state my cilantro was in, so substituted Kashir lime leaves which was the closest match I had for anything fresh and it worked a treat.

This is a great base for salsa. Love all the cilantro. It did need to be kicked up a bit. I added minced red onions, lime juice, and a jalapeno diced. And we loved it! Thanks.
