- 420 g corn kernels, drained
- 1 avocado, finely chopped
- 2 tablespoons chopped chives
- 1⁄4 cup pitted chopped kalamata olive
- 1 tablespoon white wine vinegar
- Combine ingredients in a medium bowl.
Great blend of flavours! It went really well along with couscous as a side but I think would be very versatile and wonderful along with many things or just as an alternative to salad served along with BBQ meats etc.
