This recipe makes a wonderful, plus quick & easy vegetable. I left out the pepper (personal taste), and used 3 tbsp lime juice, ground cumin. I also dumped the can of beans into a strainer along with the frozen corn. The cold water from the sink defrosted the corn at the same time as it rinsed the beans. This was put together in about 5 minutes, and then chilled for about 20 minutes while I finished the rest of the dinner. Definitely a keeper!

  1. Juice the lime. Combine all ingredients, including lime juice, in bowl.
  2. Chill.
