This is the most delicious pesto serve with pasta or just as a dip you'll love it!!
- 1 garlic, crushed
- 50 g fresh coriander
- 14.79 ml pine nuts
- 150 ml olive oil
- 29.58 ml freshly grated italian hard cheese
- 120 g soft mild goat cheese
- salt and pepper
- Blend all ingredients till smooth -- enjoy.
My husband is also a big coriander fan, and I generally am not keen to try mixing coriander with pasta, so I thought I would try this ... yum, delicious!!! So easy to make, and lots of flavour, without being overpowering. I didn't add extra salt, we felt it didn't need it. Delicious with crackers, but in fact I used most of this to toss with hot linguini for a light and flavoursome supper dish. Definitely a keeper, thanks Ricky, made for PAC Spring 2012
My DH has asked me to find him a recipe for coriander pesto for at least three years - just trying to use cilantro instead of basil in usual pesto results in quite some strange taste... So I tried this one and it was a big hit! Thanks for posting!
