Lovely method in keeping with rustic French cooking. Used Dutch oven in which I browned the chicken with a bit of bacon grease. Deglazed pan used to cook bacon with the wine ( a Chardonnay) and added to Dutch oven. Used fresh thyme from the garden and fresh ground black pepper. Added rather more small red potatoes, carrots and a cup of enriched chicken stock. Cooked in 225 degree F oven for 4 lovely hours - chicken on top of layers of the rest... lovely served with a side salad with some of the last orange beefsteaks of the season. Will thicken the broth with a beurre manie when serving again tomorrow... Unbelievably, even easier than Red Beans! Adding to make for guests menu!TY lazyme!

A great easy recipe. I have never made Coq Au Vin before and this was a wonderful recipe to start with. I added a sprig of freah rosemary and a couple of sprigs of fresh Tarragon. I used baby red potatoes also and sprinkled with Fleur de Sel just before serving. Made for Family Picks ZWT 5 for team Zaar Chow Hounds

Made for ZWT5. Lazyme this is really good. I was unsure as I never made this before but always wanted to try it. I thought it would be daunting but your recipe is easily followed and simpke to make. DH and I give you thumbs up. (ps- I have a leftover piece for lunch, snicker)

I varied a bit from the original directions. I used more potatoes and added more liquid (to cover) and braised in oven at 325 deg F for about an hour. I also made a bundle of fresh herbs (tarragon, thyme and rosemary) and added to the pot. The cooking aroma was utterly enticing and the results were utterly delicious! Thanks for sharing! Outstanding! My entire family enjoyed this wonderfully tasty dish, and it went well with a lovely Spanish Rice dish [which I made for a tag game] that I served as a side dish. I really enjoyed the use of white wine in this recipe. It rounded out the zesty flavors quite nicely. And it's quite simple to make, too. Definitely a dish I'd be proud to serve to company.
