  • Mix all in blender. Let sit 1 or 2 minute.
  • In a preheated non stick skillet pour 1/3 cup of batter.
  • Cook over med. until surface bubbles.
  • Flip and cook until underside is golden brown.

  1. Instead of using store bought buttermilk I used 1 tablespoon of lemon juice in 1% milk and they turned out PERFECT! They also turned out great using the egg replacement, Ener-G. (I have food allergies) Great recipe! Thanks!
     
  2. The fact that my family enjoyed these pancakes is great, but I was the one sold on them. I'm not a huge pancake lover, but these were excellent. I used melted butter in place of the oil and let the batter sit for a bit before cooking. Thanks for sharing this recipe - it's a keeper!
     
  3. Not a pancake fan, but needed to use leftover buttermilk and my son requested buttermilk pancakes like in a restaurant. One issue with this recipe, the pancakes tended to stick to the griddle despite oiling it, I overcame the issue by gently lifting and sort of pulling off griddle surface with flipper. With gentle technique, they kept their shape. Go too fast, they'll rip and the wet batter on the top side drips.

My Family and I moved to South Africa at the beginning of 2007 to be missionaries. My Husband is the Pastor of a church in Eden Park, a township in the Jo'burg area. We are having a great time. My kids love it (3 of them, 1 born here). We have got to do many exciting things( pet lion cubs, feed giraffes, eat Zebra(gross!)and other meats(Warthog was surprisingly the best, go figure) and swim on a beach with penguins, to name a few). I have always loved to bake but just got into cooking since moving over here. There were a lot of things I couldn't find over here(and still can't) that we were wanting so I started searching for good recipes for everything from sausage, salad dressing and root beer,to enchilada sauce, Macayo's baja sauce(posted), and Applebees hot wings! A fellow missionary turned me on to this site and My husband got me a membership for this last birthday. I am loving it!
