This is the BEST corn bread out there and SUPER EASY! Beware it is MOIST! You also can double the recipe to make a thicker batch of corn bread.
- 240.97 g box Jiffy corn muffin mix
- 1 egg
- 418.15 g can creamed corn
- 44.37 ml butter, melted
- 118.29 ml sugar
- Preheat oven to 350 degrees. Mix all ingredients together. Bake in a greased 9x13 pan for 20-25 minute.
This is exactly like the Chi Chi's Sweet Corn Cake that I remember! They used to give you a little scoop of it with most entrees, and I loved it. So glad to have found this recipe! I used an 8 1/2 x 11 casserole dish, and baked it for an extra 15 minutes or so. This is going into my recipe file, thanks for a great recipe!
