This is exactly like the Chi Chi's Sweet Corn Cake that I remember! They used to give you a little scoop of it with most entrees, and I loved it. So glad to have found this recipe! I used an 8 1/2 x 11 casserole dish, and baked it for an extra 15 minutes or so. This is going into my recipe file, thanks for a great recipe!

This is by far the BEST cornbread. Next time I will double the recipe because I like it a little thicker. Thanks for the recipe. This recipe will be added to my recipe book.
