ingredients
- 1 flour tortilla (soft taco size, about 7.5 inches)
- 9.85 ml mayonnaise or 9.85 ml light mayonnaise
- 1 avocado
- 0.25 ml lemon juice
- 56.69 g thinly sliced turkey (enough for a couple of thin layers)
- romaine lettuce (the original included the sprouts, but I prefer the lettuce) or alfalfa sprout (the original included the sprouts, but I prefer the lettuce)
- 3 slice tomatoes (optional)
directions
- Spread the mayonnaise on the tortilla, making sure to leave at least 1/2 inch around the outside.
- Scoop the flesh from the avocado and mash, mixing with a dash of lemon juice to preserve color. You should end up with about 1 1/2-2 Tablespoons mashed avocado. If your avocado is larger just save the rest for another sandwich!
- Spread avocado over mayonnaise.
- Add the turkey and a thin layer of lettuce or sprouts.
- Place the 3 tomato slices in a line down the center of the tortilla, if using.
- Make sure you don't fill the tortilla too full or get too close to the edge, or it won't wrap properly!
- Carefully roll the tortilla into a wrap. Cut into two pieces, if desired.
- Enjoy a taste of sunny California.

I roasted a turkey breast and mashed up a couple of avocados so this would be a quick and easy lunch this week, and it was! I left out the mayo as the avocado was enough of a spread for my taste, and used lime juice because that's what I had. It was very good, but next time I'll try to think of a way to give it a little more kick. I found it was a touch bland.

I'm a real estate agent in the lovely city of Rochester, New York. That's not what I expected to do with my life. I got my bachelor's in psychology, my masters in literacy education, and I taught high school special education for two years. Then I discovered that helping people find the homes of their dreams was my real passion. I've been doing it for over two years now and still absolutely love my career.
Other than that, I have a very spoiled Border Collie mix named Bear that I adopted from a local shelter in spring '08. He's gorgeous and fun and brings me great joy. Now if only I could find a man like that... LOL!
