FANTASTIC DINNER SALAD!!! This salad is wonderful. I have no idea if it tastes like the one at Applebee's but it is truly delicious! I went ahead and prepared the dressing and the spice mixture the day before along with the marinade. It was super easy to put together. The black beans are a great addition to the salad and I would recommend adding them. I only used a teaspoon of kosher salt in the spice mixture and it was perfect. I also opted to use the whole hard boiled egg instead of just the egg whites and I used regular mayonnaise. I used an iron skillet for this recipe to blacken the chicken, and I would suggest this or a frying pan you don't care about. I finished the chicken up on the George Forman grill..... GREAT recipe. This was exciting since blackening the chicken made my whole kitchen fill with smoke and I had to open the windows!! Next time I will follow the directions and grill it outside instead of trying to finish the chicken in the skillet. :-) The cajun spice rub is really good!

WOW! I wish I could pull out a 10 star rating!! This is absolutely fantastic...each and every component. My husband said that I sould ALWAYS use chicken breasts for this recipe. I made the marinade, spice blend and dressing ahead of time and then dinner was made in a snap! Our grill is broken so I fully cooked the chicken in the skillet. This recipe will go into my best of the best 2010 file! Delish!!!

What can I say? This was one amazing salad! I made only a couple changes, I used shrimp rather than chicken, marinated for only 20 minutes so the shrimp didn't begin to cook. I also cooked the shrimp completely in the skillet. For the dressing I omitted most of the honey, and replaced the Dijon mustard with a Honey Dijon. As for the salad, I omitted the cheese, the cabbage and the egg, and added a handful of corn kernels, some chopped zucchini, and a few chopped roasted red peppers. The spice blend I kept exactly the same.. amazing! DH also gave it a five star! This one is definitely going in our make again and again file! Thanks!

Amazing!!! Every bite was tasty and flavorful! The best blackened chicken I have ever had!! I did everything as told except I did not put the cayenne in. Thank you sooo much for this amazingly good salad!! I will be making this on a regular basis!

Reading labels is always important--read the amount of Sodium in this "mock" Applebee's recipes--Yikes! 3600 MG of Sodium! And the "Salad" had 64 grams of Carbos. No thanks!
