Cool Pineapple Pie

"My sister made this pie for this 4th of July and it was delicious... and sooo easy. She said it actually called for cream cheese, but thought that would be too "heavy" so she subsituted Cool Whip..."

  • In large bowl combine pineapple and juice with instant vanilla pudding, whisk together until mixed good.
  • Add Cool Whip and whisk together, pour into graham cracker pie shell and refrigerate.
  • You can garnish with toasted coconut and a cherry-- or just serve as is, either way it's a great summer dessert, light cool and refreshing.

I live in Maryland, I clean houses and have a partnership with my daughter in an online business. I love to do crafts, spend time with my daughter and grandkids. My all time favorite cookbook is a "Betty Crocker" CB I got from abook lcub about 20 yrs ago, it has an orange cover... if I can't find a recipe in there I now have Recipezaar... THANK YOU RECIPEZAAR!! my passions... my daughter and grandkids... my pet peeves, mean people, people that think they are better than anyone else... snobs!!! If I had a month off... and the money to take care of the bills for that month... I guess I would go sight sesing, do some MAJOR house work... help my daughter get her house in order, and just relax a little.
