This 4 ingredient pie is just what you need on a hot summer day! Easy, light and delicious. Try it with sugar-free and reduced fat ingredients to make it even healthier! Based on a recipe from Quick Cooking magazine.
- 1 (3 ounce) package watermelon gelatin
- 1⁄4 cup boiling water
- 1 (12 ounce) package Cool Whip, thawed
- 2 cups cubed seedless watermelon
- 1 graham cracker crust
- Dissolve Jello in boiling water.
- Allow to cool to room temp.
- Whisk in Cool Whip.
- Fold in watermelon.
- Spoon into crust.
- Chill for 2-3 hours or overnight.
I found this recipe from Taste of Home. Good stuff. I substituted lime for the watermelon because it's what I had. Love it~

VERY NICE. I didn't like how jellied the jello got while cooling to room temp but the mix tasted really good. I made the mistake of Freezing the pie like we do with the pineapple one we make- big goof cause since watermelon is almost all water it make watermelon ice cubes in the pie! Which gave me a idea for punches! freeze the water melon and use like ice cubes! Anyway this is a great fluffy pie with a bunch of flavor! and you really don't need the watermelon in it if you don't want chunks! Thanks so much for sharing
