Make sure the bananas are ripe (not over-ripe though), makes it more tasteful. I made this as a dessert and froze it in 4 individual small bowls. Eaten as a snack (in between everything else.....) it'll probably serve 2. I also garnished it with some chocolate chips and a little chopped nuts. Freezing time is not included in prep. time.

Directions

  1. Peel and slice the bananas, put them in the blender.
  2. Add remaining ingredients and blend together on high speed until thick and creamy.
  3. Scrape mixture into a container, or individual small bowls, and freeze.
  4. Before serving, move the ice cream from the freezer to refrigerator for 20 minutes to soften it slightly.

3 ageing bananas in the fruit bowl sent me searching for a simple way to use them rather than making a cake. This fit the bill nicely. I used vanilla yoghurt in lieu of cream to lighten it up a bit & left out the vanilla. Once softened in the fridge I stirred through some dairy whip. This was just lovely, thanks for posting!

This was a late entry substitution for PAC 2006. This was OHHHHHHHHH so good! And OHHHHHHHH so easy! I just popped everything into the blender and let it whirl about while I fished a bowl out of the cupboard. Popped the bowl into the freezer for a couple of hours and then we devoured it in 4 minutes flat! We had one serving with (store bought) chocolate sauce and one plain and actually preferred the plain! This is a keeper! Thank you Chef Dudo!
