I often enjoyed this salad at a local gourmet take out restaurant. They have gone out of business so I have created my own version. We enjoy this salad especially in the summer but I will also make it anytime we have a desire for it.

Directions

  1. Boil the whole chicken.
  2. When cool, shred the meat.
  3. Add remaining ingredients to your taste.
  4. Serve over lettuce, in a pineapple half or melon half for a "cool" summer meal.
  5. For those who like the flavor of currry, add this spice to give the salad a unique flavor.
